YUM YUM! This is a must have for our taco night! The best part is it is so easy to make! In five steps, you have a delicious Pico to use on Tacos, Burritos, or just dip right in as a salsa! Mmmmm, my mouth is watering just thinking about it now.
We usually make a big batch and use our Food Saver containers to keep it nice and fresh. If you don’t have one, they are great to have on hand for meats, cold cuts, cheeses and more. The best part about this Pico is it is so easy and fast to make, if you want to make a small batch, that is perfectly fine as well. Let’s face it, on taco nights, we are already chopping onions and tomatoes anyway, so why not serve them with a flair! Shock the whole family with this fresh tasting topping! I bet they will be pleasantly surprised.
So first things first, you will want to head over to your local grocery store and go straight to the produce department! (Aside from this recipe being easy to make, it’s also easy to shop for!) We are gonna grab some Tomatoes, ( I prefer Plum), Red Onion (not sweet or white, the red is the perfect taste for this.), Jalapeno(s) (Don’t worry, we are going to remove the seeds so it won’t be too spicy for our sensitive eaters), Lime(s), and Fresh Cilantro. Bring it home, wash everything up and it’s time to start chopping!
I usually chop everything but my onions first in case they make me cry. They say if you freeze it for a bit first it won’t do that but I have not tried. I also heard you can chew spearmint gum while chopping to nullify the tears as well. We are dicing everything up so use the technique that works best for you.
Now for some spice! Depending on how much you want to make will depend on how much of each item we will use. (Refer to my recipe below) Today, I made a small batch so I went with half of a jalapeno. I take the seed out but I DO throw two or three in for some extra spice, and YES it does make a difference. 🙂 Once done, diced this baby up as well and set aside.
Cilantro time! Grab your scissors and no, we are not clipping coupons! (HeHe, if you are familiar with my site, you get this joke.) It time to snip off some fresh cilantro leaves and chop them up finely.
Don’t cry yet, we are almost done and here come the onions! Once we have these all chopped up, it’s time to add everything together and give it a light toss to mix it well. Top it all with a pinch of salt and our fresh lime juice from our squeezed lime and we are ready to eat!
5 STEP PICO DE GALLO:
3 Plum Tomatoes – Diced
1/2 Red Onion – Diced
1/2 Jalapeno – Diced
1/4 Cup Chopped Cilantro
1 Small Lime Juiced
Pinch of Salt
- Once Chopped, mixed up lightly in a bowl, chill and serve later or serve immediately
