Hello and happy Thursday Confidants! Did you know that today is National Spaghetti Day? Well, it is, AND, it’s a perfect meal to warm you up during this cold snap. Spaghetti is one of my favorite things to eat, as there are so many different recipes to make with it. My personal favorite is my husband’s homemade meat sauce. It’s a fairly long process, as the longer the sauce cooks, the better it is. Since it does take so long to make, it is more of a Sunday family meal. With National Spaghetti Day lands on a week night, a quick and tasty Cajun Shrimp Pasta will do the trick. This delicious, easy meal has a kick to it too. A perfect combination to warm you up in this chilly weather. Not a seafood fan? No sweat! You can substitute Chicken instead.
First things first, we need pasta! Click here for all the current sales on pasta at all stores. I always check my famous search box for any ingredients I may be missing, so I can score the best possible price on what I need.
- 1 dozen shrimp (peeled and de-veined) (or 2 boneless skinless chicken breasts, cubed)
- 2 Teaspoons of your favorite Cajun Seasoning (This can be your personal recipe or a store bought container that is ready to go)
- 1 – 2 Chopped Green Onions
- 2 Teaspoons Fresh Chopped Parsley (You can substitute with dry, as this for plating purposes only)
- Your favorite box of Spaghetti (YUMMY)
- 1/4 Parmesan Cheese
- 1 15 oz can of Diced Tomatoes
- Salt and Pepper to taste
Add your shrimp or pasta to a bowl and coat with the Cajun Seasoning. In a separate pot, get your water boiling for your spaghetti. (Remember to add salt to prevent pasta from sticking when cooking.) Once your skillet has reached a medium heat, cook your shrimp or chicken. (Shrimp about 3 – 4 minutes on each side or Chicken about 5 – 7 minutes.) Remove shrimp or chicken from skillet into a temporary bowl or plate for now. In the same skillet, heat up the diced tomatoes, salt, and pepper. Here comes your creativity! Want less spice? Feel free to add some heavy whipping cream to tone down the heat. Love bell peppers? Chop some up and toss them in before the diced tomatoes. The options here at limitless and the best part is, no matter how much you choose to add, it is still an easy breezy dish to make! Once your have your sauce simmering, it’s time to add everything back in and toss it around. Garnish with some fresh Parsley, Green Onions, & Parmesan cheese. Last but most certainly not least, time to eat!
